My steering wheel has no adjuster and it slightly too low (i have long legs so knees get in the way), is there a way if i keep hitting it up and up the metal will bend and will permanently stay more up (the steering wheel)? or will i just break it?

That would bend the steering column, so no.

Please dont... You will bend the steering shaft and it most likely will not turn easily, and probably eventually break or damage something... Not a good idea!

My dad hired an Escort back in '98 when we were in scotland and I'm sure it had an adjuster on the column

If it was an option you should be able to adjust it byt taking of the plastic around the column and finding the place where the lever would have been found. Then figure out the mechanism so that you can adjust the column. It would be too expensive to make two machines to create two totally different steering columns.
It is kind of like some cars have the place where the cruise control button is but instead it is a dummy button that you cant push.
